How to brew green tea (without the bitterness)

If your green tea tastes bitter or "grassy" in a bad way, the tea isn't the problem — the brewing is. Green tea is delicate, and two things matter most: water temperature and steeping time.

The simple method

  1. Don't use boiling water. Aim for about 80°C. Boil the kettle, then let it sit for 1–2 minutes before pouring.
  2. Use 1 tsp of ATS Tea Green Tea per cup.
  3. Steep just 2–3 minutes. Longer than that releases bitter tannins. Taste at 2 minutes.
  4. No milk, no sugar. Green tea is best clean. A little honey or a squeeze of lemon is fine.
Reuse the leaves: good whole-leaf green tea can be steeped a second time — just add a little more time.

When to drink it

Green tea is a great mid-morning or afternoon lift — lighter than black chai, with a clean finish. For a caffeine-free evening option, try our Lemongrass infusion instead.
